  • 1/2 teaspoon cardamom powder
  • Saffron strands (optional)
  • Ghee (clarified butter)

Method:

  1. Heat ghee in a pan and roast the vermicelli until golden brown.
  2. In a separate pan, bring the milk to a boil.
  3. Add the roasted vermicelli to the boiling milk and simmer on low heat until the vermicelli is cooked and the milk thickens.
  4. Stir in sugar, cardamom powder, and saffron strands.
  5. Garnish with chopped nuts and serve hot or chilled.

2. Gulab Jamun

Ingredients:

  • 1 cup milk powder
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • A pinch of cardamom powder
  • 2 tablespoons ghee (clarified butter)
  • 1/4 cup milk
  • Oil for frying

For the Sugar Syrup:

  • 1 cup sugar
  • 1 cup water
  • A few saffron strands
  • A dash of rose water

Method:

  1. In a bowl, combine milk powder, all-purpose flour, baking powder, cardamom powder, and ghee.
  2. Gradually add milk and knead into a soft dough.
  3. Divide the dough into small portions and roll them into smooth balls.
  4. Heat oil in a pan and fry the dough balls until golden brown.
  5. In a separate saucepan, prepare the sugar syrup by boiling sugar, water, saffron strands, and rose water until slightly thickened.
  6. Remove the fried dough balls from the oil and immediately immerse them in the warm sugar syrup.
  7. Allow the gulab jamuns to soak in the syrup for a few hours before serving.

3. Rasgulla

Ingredients:

  • 1-litre full-fat milk
  • 2 tablespoons lemon juice
  • 1 cup sugar
  • 4 cups water
  • A few cardamom pods

Method:

  1. Bring the milk to a boil in a large pan.
  2. Once the milk boils, reduce the heat and add lemon juice gradually while stirring until the milk curdles.
  3. Strain the curdled milk through a muslin cloth to separate the whey.
  4. Rinse the chenna (curdled milk solids) under cold water to remove the sourness.
  5. Knead the chenna until smooth and divide it into small balls.
  6. In a separate pot, combine sugar, water, and cardamom pods and bring to a boil to prepare the sugar syrup.
  7. Gently add the chenna balls to the boiling syrup and cover the pot.
  8. Allow the rasgullas to cook in the syrup for about 20 minutes until they double in size.
  9. Remove from heat and let them cool before serving.
